Ingredients

- 1 pound chicken apple sausage, sliced into 1/2-inch pieces
- 1 medium red onion, chopped into large chunks
- 2 cups Brussels sprouts, trimmed and halved
- 2 medium sweet potatoes, cubed into bite-sized pieces
- 1 red bell pepper, sliced into strips
- 2 tablespoons olive oil, extra virgin recommended
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Fresh parsley, chopped (optional garnish)
- Red pepper flakes (optional garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sliced chicken apple sausage, red onion, Brussels sprouts, sweet potatoes, and red bell pepper.
- Drizzle the olive oil over the mixture and sprinkle with salt, pepper, garlic powder, and dried thyme. Toss until everything is evenly coated.
- Spread the mixture evenly on a large sheet pan in a single layer.
- Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and slightly caramelized.
- Once done, remove from the oven, and let it cool for a few minutes. Garnish with fresh parsley and red pepper flakes if desired.
