2 cups butternut squash, peeled and diced into 1-inch cubes
3 medium apples (such as Granny Smith or Honeycrisp), cored and sliced
1 tablespoon olive oil
2 tablespoons brown sugar or maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup rolled oats
1/4 cup chopped walnuts or pecans (optional)
1/4 cup coconut or brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons melted butter or coconut oil
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the diced butternut squash with olive oil, brown sugar or maple syrup, cinnamon, nutmeg, salt, and pepper until well coated.
In a greased baking dish (approximately 9x13 inches), spread the seasoned butternut squash evenly. Layer the sliced apples on top of the squash.
In another bowl, combine the rolled oats, chopped nuts (if using), coconut or brown sugar, and cinnamon. Drizzle the melted butter or coconut oil over the mixture and stir until evenly combined.
Evenly sprinkle the oat mixture over the apples and butternut squash in the baking dish.
Place the dish in the preheated oven and bake for 35-40 minutes, or until the squash is tender and the topping is golden brown.
Once baked, remove the dish from the oven and let it cool slightly before serving.
