4 large bell peppers (any color)
2 cups cooked chicken, shredded
1/2 cup buffalo sauce
1/2 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper, to taste
1/4 cup crumbled blue cheese (optional)
Chopped green onions for garnish
Instructions
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes.
In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, garlic powder, onion powder, and a pinch of salt and pepper. Mix thoroughly.
Spoon the buffalo chicken mixture into each bell pepper and pack tightly.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil, sprinkle with additional cheese if using, and bake uncovered for an additional 10-15 minutes.
