Ingredients
Scale:
4 medium tomatoes, ripe and juicy
1 small onion, finely chopped (about 1/2 cup)
2 cloves garlic, minced or 1 teaspoon garlic powder
1-2 jalapeños or serrano peppers, stems removed
1 cup fresh cilantro leaves, roughly chopped
1 tablespoon fresh lime juice
1 teaspoon salt
1/2 teaspoon ground cumin (optional)
Freshly cracked black pepper, to taste
Instructions
Prepare the tomatoes: If you prefer a smoother salsa, first roast the tomatoes. Preheat your oven to 400°F (200°C). Place the tomatoes on a baking sheet and roast for 15-20 minutes until blistered and soft. Allow to cool slightly before using.
Blend the salsa: In a blender or food processor, combine the roasted (or fresh) tomatoes, chopped onion, minced garlic, and jalapeños. Pulse until you reach your desired consistency; add a tablespoon of water if the mixture is too thick.
Add cilantro and seasonings: Add the chopped cilantro, lime juice, salt, and cumin to the blender. Blend briefly until combined. Taste and adjust seasonings as necessary.
Chill: Transfer the salsa to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve: Enjoy with tacos, nachos, or as a zesty dipping sauce. Drizzle a little olive oil on top before serving for a glossy finish.
