Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the liquid is absorbed. Let it sit covered for an additional 5 minutes to enhance fluffiness. Fluff with a fork.
  2. Preheat your oven to 400°F (200°C). Spread the drained and rinsed chickpeas on a clean kitchen towel and pat dry thoroughly. In a mixing bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
