4 medium zucchinis, washed and trimmed
1 lb ground beef (preferably lean)
1 cup diced bell peppers
1 small onion, diced finely
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon paprika
Salt and pepper to taste
1 cup marinara sauce
1 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Cut the zucchinis in half lengthwise and scoop out the center to create hollow boats. Set aside the scooped flesh.
In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
Add the diced onion, bell peppers, and minced garlic to the skillet. Sauté until the vegetables are tender, about 3-5 minutes.
Stir in the scooped zucchini flesh, Italian seasoning, paprika, salt, and pepper. Cook for an additional 2 minutes.
Lay the hollowed zucchini halves on a baking sheet lined with parchment paper. Spoon the beef and vegetable mixture into each zucchini boat.
